If there was ever a fruit parfait that could be called 'art in a glass', this is it. For moms who love lighter fare, but secretly love to indulge, this deceivingly easy parfait is a winner. Blood oranges give the cashew cream a delicious brightness while also adding a lovely pink hue. Chocolate and quinoa are combined to make a break-apart brittle that stands in for boring old granola.
